Mexican Rice

2 cups white rice
3 ¾ c. chicken broth
½ 8oz. can tomato sauce
minced onion, fresh or dry, to taste (optional)
Garlic, fresh or dry, to taste (optional)
Salt, to taste

Put a little oil in a pan and fry the dry rice a little bit. Add the tomato sauce. Add the onion and garlic if desired. Add the broth. Cover and simmer for 16-18 min. Add water if needed.

Instant Pot Directions:
On the sauté setting, fry the dry rice and onion in the oil until fragrant. Add the tomato sauce, broth (reduce amount to 3 1/4 cup), and seasonings. Set instant pot to manual, high pressure, for 8 minutes. Natural release for 5 minutes, then manually release pressure.
