Lemon Crinkle Cookies

1 c. butter, softened
2 c. sugar
1 tsp. vanilla
2 eggs
2 tsp lemon zest
2 Tbs fresh lemon juice
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
3 c. flour

1/2 c. powdered sugar

Cream butter and sugar until light and fluffy. Whip in vanilla, eggs, lemon zest, and juice. Stir in all dry ingredients until just combined. Form dough balls (I use a cookie scoop), roll in powdered sugar, and place on greased cookie sheets. Bake at 350 for 9-11 minutes until cookies look matte (not shiny). Makes 4 dozen.
