1 1/2 lbs beef stew meat
1 c pearl barley
1 large onion, chopped
1 green pepper, chopped
5 medium carrots, diced
1 14 oz. can diced tomatoes
48 oz. beef stock (more if needed)
1 tsp. dried thyme
2 tsp. salt
1 tsp. pepper
Combine all ingredients in a large slow cooker. Cook on low for 8 hours.
