White Chocolate Ginger Cookies

1 ½ cup butter (room temperature)
2 cups sugar
2 eggs
½ cup molasses (light)
4 ½ cups flour
1 tsp. salt
4 t. baking soda
1 ½ t. ground ginger
2 tsp. cinnamon
1 tsp. ground cloves
18 oz. white chocolate chips

Add in order. Cream the butter with the sugar. Add wet ingredients. Then add dry ingredients. Add the white chocolate chips until just combined. Roll into balls, then roll in sugar (optional). Bake at 350° for 8 – 10 minutes. Cool completely. Makes about 6 dozen medium-sized cookies.

Alternative method: Instead of adding them into the dough, melt 2 pkgs. (24 oz.) white chocolate chips. Dip cookies half way into the white chocolate or drizzle white chocolate over the cookies, and place on wax paper.
