Everyone has their own way of making chicken salad, but this is how I like it (measurements are approximate):
1 lb. chicken, cut up or shredded (rotisserie is the best!)
2 stalks celery, diced
1/2 cup red onion, chopped
1/2 apple, diced
1/2 cup pecans, chopped
1 cup mayonnaise
1-2 tsp. lemon juice
