1 1/2 cups sugar
3/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 eggs
2/3 cup oil
2/3 cup key lime juice
3/4 cup sour cream
Preheat oven to 350. Grease and flour a *9x13 pan. Sift flour, sugar, powder, soda, and salt into mixer. Add eggs, oil, and lime juice. Beat until smooth. Add sour cream and beat until smooth. Pour into prepared pan and bake for 30 minutes or until a toothpick inserted comes out clean.
*For a two tier round cake, bake in two 8-inch cake pans. You will need to double the frosting and whipped cream recipes to cover the cake.
Frosting
1/2 cup butter, softened
1 8oz package cream cheese, softened
16 oz. powdered sugar
1 tsp. vanilla
1/8 cup key lime juice
green food coloring
Beat butter and cream cheese until smooth. Beat in vanilla. Add lime juice. Add a small amount of green food color to achieve a light green color.
Whipped Cream
8 oz. heavy whipping cream
1 1/2 Tbs. sugar
1/2 tsp. vanilla
Chill metal bowl and beaters in freezer for about 20 minutes. When ready to whip, add ingredients to the bowl and beat until stiff peaks form.
Cool cake and frost. Add whipped cream by piping in swirls, either one large swirl on each cut slice, or swirls clustered tightly covering the cake. Sprinkle finely crushed graham cracker over the whipped cream swirls for a pretty embellishment.
